SIP Trunking is a specific type of VoIP service. A service provider provides access credentials to a PBX located on-site.
The PBX handles the distribution of phone calls, and all VoIP features. the service provider simply ensures there is a connection to the PBX. A service provider may support a PBX if they partner with a PBX manufacturer.
SIP trunking tends to be cheaper than hosted VoIP, but has fewer support paths.
